Hi Yvonne,

I came to your market stall in Dungarvan a few weeks ago and bought a batch of your hotpots, absolutely perfect for my husband who has to work lots of night shifts. I’m trying to be a bit more adventurous at home with my kids’ lunches, they absolutely love pasta and noodles but I have literally overdone the tomato based sauces. Have you a quick and easy noodle recipe I could try out? I will be forever grateful!

Hi Tara 

You are not alone. I’m always trying new things here with the boys. Aaron breaks my heart though as he so doesn’t like trying new things. I found this recipe filed in my vegetarian folder, so, I’m going to try it out myself tomorrow and we can swap feedback from the kids.

VEGETABLE PAD THAI

Ingredients

175g rice noodles 

75g broccoli, cut into florets 

2 tablespoons sesame oil 

2 shallots or 1 onion, peeled and sliced 

½ red pepper, deseeded and thinly sliced 

1 carrot, peeled and cut into thin strips (I grate) 

1 garlic clove, crushed 

Salt and Pepper 

Sauce 

2 tablespoons soy sauce 

1 tablespoon sweet chilli sauce 

1 tablespoon vegetarian fish sauce (Nam Pla) or 2 teaspoons hoisin sauce 

1 tablespoon of brown sugar 

Vegetable Pad Thai

Method

Cook the noodles in boiling salted water, according to the packet instructions.  Add the broccoli for the last 3 minutes of the cooking time. Drain and refresh in cold water.

Heat the sesame oil and fry the shallots or onion, pepper, carrot and garlic for 5 minutes. Add the noodles and broccoli, along with all the ingredients for the sauce. Toss together over the heat, until heated through. Season and taste.
