Slow Cooked Spicy Chicken Tagine

Its Sarah, I’ve just invested in a slow cooker and I know this is your favorite way of cooking for your private catering events.  Would you mind sharing a wholesome chicken recipe to start me off on my slow cooking adventures?

So lovely to hear from you! Slow cookers are a godsend to any busy household… I love this chicken tagine recipe, it’s a little spicy though, so if your not into spice leave out the cayenne.



3 Zucchini, halved lengthwise and cut into 1/2 inch slices

400g tin of Chickpeas rinsed and drained 

400g chopped tomatoes 

500ml chicken stock 

3 garlic cloves crushed 

2 teaspoons ginger 

1 teaspoon turmeric 

1 teaspoon cinnamon 

½ teaspoon salt 

¼ teaspoon cayenne 

6 bone in chicken thighs 

Cooked Wholewheat Couscous 

Spicy Chicken Tagine

  1. Combine zucchini, chickpeas, tomatoes, stock, garlic, ginger, turmeric, cinnamon, salt, and cayenne into your slow cooker.  Add the chicken and push it down into liquid. Cover and cook until chicken is fork tender, 4/6 hours on high.
  2. About 20 minutes before cooking time is up, cook the couscous according to the package instructions.
  3. Place couscous on warmed plate and top evenly with the chicken.  With a slotted spoon, spoon vegetable mixture over chicken.
