Any chance you could forward me on a simple breakfast granola recipe that I can bake at home as I’m on a health kick and need food that fills me up in the morning stopping me from dipping into the snack cupboard in work lol.

Hope life is good lovely to hear from you don’t worry your not the only one finding it hard to eat well at the moment I think everyone is now gearing up for Santa. The below recipe is a go to for my market stall customers the original recipe was given to me by a good friend but I tweaked it as I never use any oils or sugar when baking my granolas making them even more nutritious. Give it a go and let me know what you think of it.
HEALTHY CRANBERRY & COCONUT GRANOLA
500g Flahavans Jumbo Oats
50g ground flax seeds
50g sesame seeds
50g pumpkin seeds
1 ½ teaspoons vanilla extract
½ teaspoon ground cinnamon
½ teaspoon ground ginger
½ teaspoon ground nutmeg
Pinch of sea salt
50g desiccated coconut
Healthy Cranberry & Coconut Granola
- Heat oven 160 C.
- Mix the oats with all the above spices and bake on a baking tray and bake for 15 minutes making sure to check and stir from the outside in every 5 minutes.
- After 15 minutes add in the nuts and seeds and bake carefully for 10 minutes.
- Once out of the oven add in the cranberries and the desiccated coconut.
Store in an airtight container and enjoy. Absolutely perfect with chopped fresh fruit and natural yogurt.
