Fire yourself up from the inside out with this immunity boosting potion.
Dice 1 red onion (high in antihistamine quercetin)
Dice 1 green chilli (decongestant)
Thump size piece of ginger finely grated i used a microplane (anti- inflammatory)
4 garlic cloves crushed (antiviral)
Melt 1 teaspoon of coconut oil in a heavy saucepan. Add the onions, ginger, garlic and green chilli. Saute on a low heat stirring occasionally. This only takes around 6 or 7 minutes
I cover the sauted items with a butter wrapper and lid
100 grams Goji Berries (immune system supporter)
Slice 250 grams of mushrooms
Chop 2 Sweet Potatoes (anti-inflammatory)
Add the sweet potatoes, mushrooms, goji berries to the sauted mixture
Pour 1 litre of boiling vegetable stock on top of the sweet potatoes, mushrooms, goji berries and sauted mixture
Bring to a fast boil then simmer with lid on until your sweet potatoes are soft
Garnish and enjoy.
